Sausage, Peppers, and Onions are a fan favorite in my house and I usually make sandwiches out of it; however, this particular recipe is a quick made, keto friendly version and instead of putting it on carb filled starchy bread, it’s laid over a cauliflower rice. I omitted the onions this time around, since we had none on hand.
2 Tablespoons Olive Oil
1 tablespoon chopped garlic
3 bell peppers (red, orange, and yellow) sliced
1 lb. of Italian Sausage (sweet or hot)
1 teaspoon basil
1 teaspoon onion powder
1 teaspoon Garlic powder (w. parsley)
1 teaspoon Pink Himilayan Salt
1/4 teaspoon pepper
1 Birds Eye Steamfresh Riced Cauliflower Original
Cut the Italian sausage into bit-size pieces (sausage cooks faster when cut into smaller pieces). In a pan heat 1 tablespoon of olive oil with Italian Sausage on medium heat. Cook the sausage on the stove until it is brown approximately 7 to 10 minutes. While the sausage is cooking on the stove, slice the bell peppers and put aside. Once the sausage is cooked, remove from pan and put aside. Add 1 tablespoon of olive oil, chopped garlic, basil, garlic powder, salt, pepper, and peppers to the pan, cook until brown approximately 5 minutes. Add the sausage back to the pan and cook for another 5 minutes. Put the riced cauliflower in the microwave and cook according to the package directions. Once the cauliflower rice is done, plate and serve.
